Abstract

World pork production continues to grow, but since 2016. in the structure of the main types of meat first place was occupied by poultry products, then pig, cattle and sheep. By 2026, the projected slowdown in the growth of all types of meat, with 75% of the additional volume of production will ensure the developing countries. The leading pork producers are China (48% of world production in 2017), the EU, USA, Brazil, Russia, which together produced almost 86% of the world production of this type of meat. China and Brazil are dominated by large-scale production in small-scale family farms, but in the twenty-first century its concentration accelerated. In the United States, the main pork production is provided by medium and large farms (the cost of sold agricultural products exceeds $ 350 thousand.) with a full production cycle, using modern methods of keeping and feeding pigs. The selection and breeding work focuses on the production of hybrids with high productive qualities using Yorkshire, Landrace and Duroc breeds. Organizational innovations in pig production are manifested in the form of production and market contractual agreements between producers and companies or large firms. Pork production in the U.S. is projected to grow further.
